Is it possible to use these with the sidekick3 to listen to music

Nope. The SK3 doesnt have that enabled.

but how about these: http://n-gage.com/w/ShoppingCart/ca....do?productId=0

They are a standard bluetooth headset with the mono being ported to both ears. I thought about giving the sk3 a go with a pair of these to see if it will do as a makeshift bluetooth stereo.

You wont be able to play stereo music on bluetooth device, even if it goes on both ears.

le sigh....

its a mono bluetooth headset (like all the other one ear headsets) that uses the cable to port the sound to the other ear. Basically it's dual mono, not stereo, but it gives it a wireless headset option to the SK3.

The ngage, 6230, etc. don't have a2dp but will play music over the bluetooth. A2DP is not required for that act and a number of phones do that. Now, if the Sk3 doesn't even do that (don't know , haven't tried) then yeah .. even this wont work.

It has a 2.5 mm slot. You could always buy an adaptor or just use 2.5mm headphones.
