Dash: Any way to create folders in Messaging?

I'd like to create sub-folders (or additional folders) to organize my mail after I receive it. For example, "Personal", "Office", and so forth.

When I get into "manage folders", there are no options. I don't see where to add folders.

More importantly, I'm trying to figure out how to keep my mail from being deleted when I check the mail server again after messages have been deleted from the server. It deletes the messages from my Inbox! Jeez... what if I need to save the message so I can respond to someone later?
