When I push and hold 1to go to Voicemail it brings up a number that is not even mine but when I type in my password it takes me to my voicemail. When I went to contacts and changed the number it shows my number under contacts but when I push 1 it brings up that weird number. Its not that big of a deal but it annoys me.

Also what does the "E" Mean to the right of the battery bar next to the signal strength. There is also the "E" near the ear piece which is for EDGE, Does the other "E" mean the same thing?

that is the vmail number. yes you can call your own number then get your messages but that is the number to go directly to your mailbox. and yes the little E means edge, but more importantly that one means that you have an active data connection like internet.

So is the number the same on every Dash? Why is it like that? Usually it is your number or *86. So the little E near the battery meter and signal strength means there is an active data connection or the other E? How come it comes up after I turn my phone off and turn it back on? I am not on the internet through Wi-Fi or Edge. The only thing I am on is AIM.

the little E over the signal means you are connected to data i.e. AIM

It's not the same on every dash...it's YOUR voicemail box's number. and it's not exclusive to the dash. i've had t-mobile for over 5 years, and it's been that way with the 3 phones i've had prior to the dash.
