8525 Gmail, am I doing this right?

I have my Outlook setup to get my Gmail account on my PC. On my phone, I added the same Gmail settings. Everything seems to work fine, but on my phone when I Sync, I get the mail in my Gmail account on the phone, and the outlook account on the phone. I tried deleting the Gmail account on the phone, but it would not let me send/receive unless the phone was synced.

Maybe I am mis-understanding the Sync part, or maybe the Outlook part. I want to be able to still get my Gmails on my phone while I am on the run, and have it go to my PC at home.

I think I can just delete the option to Sync Email, but then will that mess up my Sync because I save contacts from those email addresses sometimes.
