I have an old $30/month plan that I'd like to keep for now. If I get an iPhone, could I keep the plan and just add data for $20 extra. Can I do this, or is Apple/ATT basically requiring customers to spend at least $60/month on the iPhone plans?

You keep you old plan. For existing customers follow the link: Rate Plans on Apples Site and then click on the "Existing Customers" tab.

Any Orange (Cingular) GSM plan can get an iphone added just by picking the data plan. Grandfathered TDMA plans and ALL Blue (Former AT&T Wireless) plans are ineligible and would require you to pick a new, current plan.
