Is Jailbreak completely reversible?

I read a thread where someone had a Sim unlocked iphone and was told something to the effect of... you will have to re-unlock it everytime you update. I'm not sure if this is because it was SimUnlocked, or because they were considering not telling AT&T that they had an iphone.

Whoever you read this from I would believe was talking about the unlock, and that's sometimes true (some people are having to re-unlock after every firmware update, some didn't).

Jailbreaking is not the same as unlocking. You can use a jailbreak to bypass the iTunes activation (to use any active AT&T SIM) or add 3rd party applications. A jailbreak is reversible (a restore brings back the phone to a 'virgin' state).
In some cases if one bypasses iTunes activation it will have to be re-jailbroken after each update or restore.

If the iPhone was activated by iTunes (and using the SIM from iTunes activation), updating or restoring doesn't affect anything but the loss of 3rd party apps.
