If I restore my iPhone through iTunes, does it also load the latest firmware? Cause I don't want to update to 1.1.2 I want to stay at 1.1.1

First downgrade the 1.11 Firmware file

Then you can put your iPhone in DFU mode by holding Sleep and Home buttons for 10 seconds and the releasing sleepy while continuing to hold home. iTunes will detect an iPhone that needs to be restored, in which then you can select which firmware you want to restore to by holding shift while clicking restore and then choosing the 1.1.1 file.
