how do i get my 1.1.1 back to stock?

i got a 1.1.1 off a guy today and it has all kinds of apps like games and stuff that i want to get rid of. also there are a bunch of sounds i dont like set for everything, but i go into customize and hit restore to backup and nothing changes.
under installer there is nothing to uninstall, so i hooked it to ibricker and it dont show any apps there either, how do i get this thing back to stock form but remail unlocked on 1.1.1?
2nd question, somehow he has it so on the home screen you can slide the page sideways for more icons instead of up and down like on my other iphone with customize, is this something in the new customize 1.20? i only have 1.13 on my other phone.

Download old firmware.
Put the iPhone into restore or recovery mode forget which one. Once its there start itunes ctrl+click I believe it is on iTunes and browse to where you downloaded the old firmware.

ok so if i restore the phone with 1.1.1 firmware, (the same as it is) will i have to unlock it all over again? or will it remain unlocked? i mainly just wanna change the system sounds, the guy i got it from has them all changed and i cant go back to stock ones.

Just restore through iTunes and jailbreak+Unlock it yourself.
This ensures that the phone only has the changes you have made and if any issues arise, you will know what the most likely cause is.
Jailbreaking 1.1.1 is as easy as it could possibly get so don't shy away from doing it yourself.
Obviously, inform yourself before you do anything by reading the stickies here.
