I want to buy an unlocked dash of ebay but want to make sure everything will work. I am on a family plan (9.99/month) and when I get the dash i wanted to add the 19.99 unltd. text message and IM option. I don't want to use the internet or any data. Would I be able to configure the dash to work for just AIM and text messaging?

im option uses data. text messaging does not.

I'm going to guess that the setting would be the same as the blackjack. If you can find those, you might be in business. Also check the At&t support page on their website. Its got the settings for their phones.
