Sync Email Accounts not working?

My iPhone hung up two days ago reading an attachment. (The attachment, a .doc, came up, then the Back arrow wouldn't respond. I could get back to the home screen, but clicking the mail icon dropped me back into the attachment view.) Since I was away from home, I deleted the account in settings, thinking that I could just restore it on my next sync, since I have iTunes set to sync with my Outlook account settings. Several syncs later, that account hasn't been restored, though I've unchecked, synced, and checked it again in iTunes.
Any ideas? I could set up the account again manually, I guess...
iTunes 7.5.0.20 and iPhone 1.1.1.
