Lots of different stuff out therefor the TouchFLO cube and Today screen...can't name any
As for the keyboard, I'd go with the Happy Tapping Keyboard (iPhone look-alike) or PCM keyboard. Both fingertip - friendly once you get use to them.
As for YouTube videos, download TCPMP 0.72 and Skunkworks Flash Bundle...lets you play Youtube, Google Video, Mega video, etc, etc.
Search on google...shouldn't be hard to find.

I use PCM Keyboard with the iClone layout/skin. Looks exactly like the iPhones keyboard (literally lol)
For the theme, I was tired of the same old WM6 theme on my Touch and installed PointUI home (finger tip friendly)
To make it look better, I use S2U2 (Slide2Unlock) v0.99c.
For Internet I use Piscel Browser v1.2 (works great on the Touch) and is just like the Safari web browser on the iPhone.
For the Windows media player, I use the iPhone/iTouch skin for it, so the player can look like the iPhone's.
I also use OmapClock to overclock my phone's processor (be very careful with this) :P it is used to clock the phone's processor (say from 400mhz to 500mhz, or 520mhz)
I use the iPhone dialer skin too (Yes I like the iPhone).
Oh yeah, PockerRAR (just like winRAR on your pc, but it's on your pocketpc) great for extracting rar files and zip files.
GoogleMaps, just like Google Earth, exept not 3d, its all flat. You can download it to your touch from the google site. Very good for looking around the world I guess.
That's pretty much it. I think these would all be good for your touch. Just search on google for all of them.
