How to/can you delete your iTunes account off your iPhone and replace with another?

Well I have my iPhone and would like to remove my Mobile iTunes account off of it before I ship it out.
IS this possible? I haven't seen a thread on this yet so I really had to resort to this option.

EDIT: For some reason I just tried to download a song off Mobile iTunes and it said no iTunes account please connect to iTunes to configure your account...
