I want to make sure i understand before i upgrade

I'm currently on version 1.1.1.
its unlocked on Tmobile and jailbroken. (or is that the same thing?)
either way...everything works fine now.
i want to upgrade to 1.1.4 and still have it work for me on tmobile with my sim card.
what is the EASIEST, SAFEST way to do this? i have been reading about iPlus and ZiPhone...which one is better? (plus, when i went to the ZiPhone website...their download section was down...is there another link to their software with instructions?)
if there are any STEP-by-STEP instructions on it, that would help too.

You can use either. iPlus2.0b is preferred and recommended for 114 because it doesn't downgrade your bootloader from 4.6 to 3.9 irreversibly for new phones. However you are likely to have bootloader 3.9 anyway so use either iPlus 2.0b or Ziphone 2.5.
Both are easy and safe in that thousands of people have used them successfully with no report of bricking. Its a simple 3 minute process and you can use any sim after unlocking, that's the point right?

and how do i backup my contacts on my iphone before i do this to make sure i dont lose anything?

When you sync it with iTunes, it'll automatically create backups for you. When you connect a newly restored phone to iTunes, it'll ask you if you want to restore your settings or set it up as a new phone.
It is generally recommended that you set up the phone as new and NOT restore settings. But if you absolutely must keep your old text messages and notes, go ahead and restore the backup. If you don't run into any problems, great. If you do run into problems, then you'll have to redo the process (restoring 1.1.4, jailbreak), this time setting up the iPhone as a new phone.
Edit: If all you're concerned about is your contacts, iTunes should sync the contacts from your phone with your Outlook address book. You can still set it up as a new phone and easily sync your contacts back over to your phone.

Do I understand this correctly?
After I complete unlocking/jailbreaking with iPlus 2.0, I can then connect to iTunes and sync with the Address Book, iCal, iPhoto, etc on my MacBook as a new iPhone?
