I plan on calling customer service and have them help me set it up. Maybe you should give them a call too.

There are several ways to setup the Touch to receive Gmail and Hotmail e-mails. I have not tried setting up for Hotmail (& Yahoo Mail) because POP access is available only to paid customers. Below is my setup to receive Gmail e-mails. It is likely not the ideal or easy way, but it works for me.
Configuring the Touch for Gmails:
1. Select (Windows Mobile) "Start" and then "Messaging"
2. Click "New E-Mail Account"
3. Enter your e-email address, eg abc@gmail.com
4. Uncheck "Try to get e-mail settings automatically from the Internet"
5. Click "Next"
6. Choose "Internet e-mail" as your e-mail provider
7. Click "Next"
8. Enter your name. This will appear on your outgoing e-mails
9. Enter an account display name, eg. "my gmails"
10. Click "Next"
11. Enter "pop.gmail.com:995" (without the quotes) for incoming mail server
12. Choose "POP3" for account type. (It is possible to use IMAP4, but I prefer POP3.)
13. Enter your e-mail address, eg. "abc@gmail.com", for user name. Note: Because I want to retrieve the same e-mails from various clients/software, I include the prefix "recent:", eg. "recent:abc@gmail.com"
14. Enter your password
15. Check "Save password"
16. Click "Next"
17. Enter "smtp.gmail.com:587" (without the quotes) for outgoing (SMTP) mail server
18. Check "outgoing server name requires authentication"
19. Check "Use the same user name and password for sending e-mail"
20. Click "Advanced Server Settings"
21. Check "Require SSL for Incoming e-mail"
22. Check "Require SSL for Outgoing e-mail".
23. Choose "The Internet" for network connection
24. Click "Done"
25. Click "Next"
26. For automatic send/receive, select how often to send/receive e-mails, eg. "Every 10 minutes"
27. For download messages, select how far back you wish to download the e-mails. I prefer just "Today's messages"
28. Click "Advanced Settings"
29. Optional, check "Send/receive when I click Send". I have this checked.
30. Optional, check "Use automatic send/receive schedule when roaming". I do not have this check to avoid roaming charges.
31. For when deleting messages, select either "Delete them off the server" or "Keep them on the server". I choose the latter so that my other clients/devices can still retrieve the same e-mails.
32. Click "Done"
33. Click "Next"
34. For message format, select either "HTML" or "Plain Text"
35. For message download limit, select a download limit (per e-mail). It is best to set a limit to avoiding e-mails with large attachments.
36. Click "Finish"
Gmail configuration to allow POP access:
1. Login to Gmail
2. Click "Settings"
3. Click "Forwarding and POP/IMAP"
4. For POP download, check either "Enable POP for all mail" or "Enable POP only for mail that arrives from now on". I prefer the latter.
5. For when messages are accessed with POP, select eithe "keep Gmail's copy in the inbox", "archive Gmail's copy", or "delete Gmail's copy". I prefer the first one.
FYI, in my tests, I have noticed that the Touch will download all messages, including those identified by Gmail as spam or have been been deleted by my custom filters. To solve this problem, I created another Gmail account which will solely be used for the Touch. Then, I just create filters from the original Gmail account(s) to forward only e-mails that I want to this new account.
