i hate it when an icon sticks out for some new app i downloaded because there isnt an icon for it...which ones stay the most up to date?

yeah leaf stays really up to date i believe and has over 300 icons i think. either way though, you can search somewhere like modmyifone.com or just google, and find icons most likely. then you just SSH them on over to the icons folder of your theme for summerboard and that icon will be replaced (or you make your own to match the theme, many have a template photoshop file for you to do this.)

My all time favorite: Buuf ² by axero. It currently supports over 400 apps & webclips and has a bunch of skins for all aspects of your phone.

hahah thats the one im using right now. ive had it for a month or two; its my favorite one. the only thing is that there isnt an icon for just one of my apps: streetflow.
