Using the iPhone on ATT WITHOUT a data plan?

I just ordered one of the refurbs, and I want to use my existing ATT account and SIM card.
For various reasons I can't upgrade my plan to include the iPhone data.* In other words, I want to use the iPhone as... just a phone, with my current SIM. No internet access at all! I do NOT want it reaching out to the interwebs and charging my non-data-friendly plan for that at some crazy rate.
Is there some way to lobotomize the iPhone, and convince it never to use data? I guess it's the same thing if I was traveling and didn't want to run up a $3000 phone bill for international roaming data usage.

* if you are curious, I am on a family plan, and going legit with the iPhone will extend the contracts for ALL phones on the plan.

use boss prefs and disable edge
