Is it possible? I've seen a few people with more than 4 in their dock, so it'd be nice to have the same.

I would suggest using Customize rather than Kate. I've heard many reports of Kate crashing iPhones...

Does Customize 2 allow 5 dock icons? I thought the last version that did only worked on 1.1.2 and lower.
