backing up and restoring hacked phone

my iPhone is at v1.0.1 and I have some version of installer.app installed. About 4 months or so ago, installer just kept quitting on me and ever since then I've noticed that many apps unexpectedly quit on me.
I'm finally manually backing up my phone Contacts using iBrickr.
(I have had trouble syncing using iTunes)
My goal is to update my firmware to the latest version and then transfer my Contacts (and some photos) back onto the phone.
After backing up, do I run any risk by just going to iTunes and using Restore??
I'm just afraid of Bricking my phone. Which would be really bad since I don't have a landline anymore.
also, to backup my photos... is it just a matter of copying the Photo Database and all the .ithmb files?
and my contacts... just copying AddressBook.sqlitedb and AddressBookImages.sqlitedb ?
