MrDevil,
I have both. I was initially so excited to get the V600, having researched it thoroughly, and learning that it had so many more features than the phone I was replacing (a T68i). But then the V600 actually arrived...
There are definitely other factors to consider in making your decision; I went running to the K700i for a number of reasons. The V600 strikes me - and I DO NOT intend to offend anyone by saying this (really, it's said with a smirk and a shrug) - as a LADY'S phone. The chrome and black color, the "event lights," the clamshell design (reminiscent of a makeup compact), and the constant cutesy beeps and tones that it emits (the majority of which you can't change) - quite frankly, I had a visceral, nauseous, rejection reaction to the V600. The K700i is DEFINITELY a more masculine, executive, classy design.
I also find the K700i's reception a little better, the keys more tactile, the menus more sensible, the size more "pocketable," and the address book more intelligently made. Its voice dialing feature allow you to simply speak a "Magic Word" to get the phone ready to accept a spoken name, whereas the V600 requires you to push a button on the side of the phone before speaking the name. (This could be a safety issue when driving.) Finally, the sound quality of the other party's voice on the K700i is PHENOMENAL - I've never heard anything like it on any other cell phone, especially when you use the included stereo headset (both ears used = much better sound, obviously). That same quality on the V600 was actually worse than on my old T68i.
Now, having said that, the V600's battery life is better, it has interchangeable face plates, a better camera (although the K700i can capture some video), and a louder speakerphone. But the K700i's speaker is still loud enough, and the other things listed here I don't really care about (how hard is it to plug it in to be charged once a day or every other day?). If the camera thing really matters to you, you should be looking at more expensive models anyway (chiefly the S700i).
Lastly, MANY people keep posting about what a "hassle" it is to turn on the K700i's speakerphone. Well, both phones unfortunately require a call to be in progress before the speaker can be switched on. The V600 then requires (variably) one-two button pushes, whereas the K700i always requires two (you just push the menu joystick and then press the number 4, 5, or 6 depending on where "Speakerphone" is in the pop-up menu). I assure you this takes less than 1.5 seconds to accomplish!
