Hey,
Let's see....
Modding your phone with your Mac is pretty limited. Here's what you can do with Bluetooth:
-> Upload pictures, videos and audio (ringtones, mp3's)
-> Upload java games
-> Use iSync for phone book and calendar syncronization (that actually works)
Does your PowerBook have Bluetooth? If not you might consider adding it.
USB cable:
If you can get Moto4lin (Mac OS X version) installed and configured, you can:
-> Upload new skins
-> Change startup & shutdown graphics and audio including lcd cover image (cl.gif)
-> Remove unwanted files to free up space
-> Edit seem files to customize your phone's settings

There's a post about Mac software somewhere, if I find it I'll post the link.
Edit:

How can I open transflash saved pictures using Mac OS X 10.4.3 on a PowerBook G4? I can put the .jpg files on my hard drive, but all I get is an error message.

Well if they are indeed .jpg files they should open just fine with Preview. What program is giving you the error message and what IS the error message?
