I don`t have Mac but you can use Apple`s flagship media software: Quick Time 6.5 Pro or newer is OK, use export option to encode 3GP files. Video encoder looks like 1 pass VBR only so it`s not as good as Sorenson Squeeze 4 2-pass VBR but still much better than ****** Nokia Multimedia Centre (if exist for mac...) and similiar tools for PC.
QT Pro has best (I mean, really BEST at all aspects) AAC encoder. iTunes has the same encoder as well so sound quality will be very good.
I advise you to set audio encoder to:
- 64kbps (encoding quality set to Best) for 32khz stereo (best quality/size ratio), enough for music videos
- 96-112kbps for 44khz stereo (if you need perfect sound quality)

and video encoder to 3GP (mobile mpeg4, choose this in export file type), resolution to 176x144 (for 903 you can also try 320x240), fps to 15 and bitrate:
- 96-128kbps for QCIF (176x144), you have to try how much data stream you will need, more than 128kbps might be a waste of memory,
- ~500-600kbps for 320x240 (512kbps for example) should be enough,

That`s all. I don`t have Mac and can`t really help you more.
