Yes I was thinking about learning to seem edit and flashing....what are some of the advantages, and disadvantages of doing so? also could there be some side effects later on from flashing? or seem editing?

Advantages: Added functionality, extra features
Disadvantages: Voids warrenty, can brick your phone, may notice some side effects later on.

Be careful, thats all. And if you aren't willing to give up your warrenty, then dont bother modding.

like what available extra features would be?

Depends on what your carrier has disabled. For example: Ring Then Vibe, extended video recorder, added camera functionality (exposure adjustment), transfer data with MPT (some carriers disable this), outside lcd change, etc etc etc.

wat about adding more memory into a v3 lets say/

you can't "add" more memory, but you can delete a lot of the factory/carrier installed files (ringtones, pictures, videos, etc) to free up memory. Most can get 9-10mb free pretty easily.

you get to delete alot of junk! unless you like the stock ringtones and wallpapers ect. and a monsterpack flash will definitely give you 7.5 megs, but read up on it! it's is a must, and 1st, you should list everything about your phone, bootloader, flex, provider, and someone will head you in the right direction. if you ever flash/flex it in, you must NOT DISCONNECT YOUR PHONE, and always have it fully charged, in this flashing mode your phone does not and isnt being charged at this time! but many has unpluged it or flashed with a low battery, and messed up thier phone. its some scary sh*t to do, but thats why you are here, isnt it?
