make a custom rom... there are tons of threads on how to do that. You can also check out the treocentral forums. They might have a little more information. Shadowmite has the Treo650 tool to do these... Good luck!

You could also change it's category to Unfiled so it doesn't show up in the Launcher.

I recommend the custom ROM route, my Treo has never been stabler since I did it. But you could also use Obfuscate to simply hide the icons.
