and this will only happen once i jail break? if my phone is jailbroken then the warranty is void on the iphone or can i "unjailbreak" it somehoW?

Yes, the only way to customize your phone is to jailbreak. Jailbreaking "may" void your warranty but it is easier than a child's play to go back to factory setup. Let's say you jailbreak now and 2.1 comes out. All you do is update through iTunes and boom, it's back to factory setup.
