Keep in mind, even if there aren't outward facing features that ESE81 has and ESE53 hasn't, they did a build for a reason.
We aren't privy to real release notes that details every bug that was fixed going into each build, there may be a whole host of under the hood fixes/improvements in ESE81 over ESE53.
Remember, something caused them to hold back on ESE53 release, something severe enough to make them want to endure another black eye about pulling the update at the last minute.

Yeah, until enough info is gathered we just have no idea what diffrence(s) there is between ese53 and 81.
We need smart people to compare the new build, and just average users to use it. Only after collecting info will we know.
Though we are assuming that whatever changes there are between ese53 and 81 are probably not very significant. But you never know.

Well...given the flash file is over 20MB larger than ESE53, I am guessing there is some stuff in the system directory that will be of great interest to devs and ROM builders.
The fact that it has the same baseband version as ESE53 would indicate that there are no changes to the NVM for RF improvement over the earlier release.
I don't think it will have the same impact on the dev community as the release of ESE53 though, given the minimal feature list in the leaked VZW announcement.

At noon on 03/30, 1,000 users will receive notification of the update.
At 11:59 PM on 03/30, 9,000 more users will receive the update notification.
After the first 10,000 users receive the update on 03/30, there will be a 24-hour period when no additional upgrades will be delivered.
On Day 3 (04/01), 200,000 users will receive the update notification at 11:59 PM. This schedule will continue each day thereafter until the update has been delivered to all users.
