I have a few apps I can't seem to delete. Any ideas how I might get rid

I believe you'll need to root to remove those.
Edit: Just noticed that you are rooted. You can do it from the adb shell with elevated permissions. You'll need to know the filenames and you should probably copy them off as opposed to deleting them in case you make a mistake or change your mind.
Edit #2: I believe root level backup programs like Titanium Backup will do it as well.
Titanium Backup will let you back up these apps and delete them.
You can restore the apps in case you need to.

Are these apps forced down to my phone from carrier; T Mobile in my case?
They might be part of the ROM itself and written to the system partition. Titanium can still remove them.
