Can't speak directly to your issue, but the Dolphin browser has a User Agent setting which does what you want, I think.

I have searched the threads and found out that if you use the about:debug and then change the UAstring to desktop it will stop the browser from going to mobile websites. But it never stays, it always disappears does anyone know how to do this and make it stay? Any help would be appreciated!

About:debug settings aren't persistent beyond your current session. Once the browser process is closed (or killed by a task killer) then they revert back.
