I've used a Samsung Focus in the past. Worked fine without MMS (I'm not sure if you can change MMS settings on Windows Phone 7).
To change the APN to att.mvno, go to this link and scroll down, it mentions how to find the APN setting.

Sorry if I missed it but I did search first. I am wanting to put my e71 sim in a windows phone 7 device.... Just wondering if anyone else has done this ? I can't seem to find the apn setting or any other info.

turns out there is a way to to edit mms settings with an app that samsung makes. I haven't been able to try it on my Samsung Focus because it only lets you edit if your phone is unlocked and mine is not. Got my phone unlocked and the Network Profile app doesn't work to change mms settings for these AT&T MVNOs. Whenever you try it autopulls the standard AT&T web and mms settings
