So I have an unlocked 9780 that's stock OS (not branded to any carrier). It presents itself as not the latest version of the OS and is available for update once I plug in my Rogers SIM.
1) If I update to the Rogers OS, is the phone still unlocked?
Currently I notice when I throw in a telus sim it installs the telus extras, and rogers it downloads and installs the rogers extras with the stock OS....
2) Will the right carrier just download and install/delete the respected apps after the upgrade to a certain carriers OS?
I have very little experience with Blackberry so I'm curious to figure this out.

Correct, once the hardware is unlocked, it will always be unlocked; updating the software is completely separate. As for extra icons showing up, that's because the carrier sends service books to your device upon activation on their network. There's no way around that; you can delete them, but they'll probably be re-sent automatically. I just hide the icons if I don't want them.

If your device works as you want and need it to work, then it is not broken and doesn't need to be fixed with an OS update. I have seen way too many times where someone did a minor OS update only to wish they had not.
My suggestion is always not to update to the latest and greatest release if everything on your device is working the way you want it to work.
I have to agree. If the device works properly, there really is no need to update the device. Just because there is a update doesn't mean that you have to install it. I am a prime example of this, still running OS 5 on my 9650, when I could update to OS 6. No need to, as OS 5 works perfectly fine for me.
You can try to search for your current OS version and install that later if you want to return to it. Personally, I like always having the newest releases. But following what others have said, if it isn't broke, don't fix it!
