Restoring from backup is a procedure used to restore content and settings to a device without affecting the firmware (or OS). To eradicate a jailbreak what you want to do is restore the firmware (also called restore the OS), which is a different procedure. Both procedures are initiated from iTunes.
I am a little confused. My Verizon phone was able to roam on GSM because they used TDMA. Tell it was shutdown. The phone recognizes it as Analog. If PCS has TDMA, It could be technically be used on GSM.

just be forewarned: while you can always restore stock firmware to un-jailbreak, depending upon your device, you may have no choice but to install the latest version of the firmware.
