Although I have never jail broken my iPhone, from everything I've read about it all you have to do is restore the phone from a pre jailbreak backup.

Restoring from backup is a procedure used to restore content and settings to a device without affecting the firmware (or OS). To eradicate a jailbreak what you want to do is restore the firmware (also called restore the OS), which is a different procedure. Both procedures are initiated from iTunes.

just be forewarned: while you can always restore stock firmware to un-jailbreak, depending upon your device, you may have no choice but to install the latest version of the firmware.
