Options > Security > Security Wipe. Select what you want to wipe. Be sure to remove the memory card before you ship the device out.
Some people will load a different version of the OS on there, which will completely wipe everything previously off the device. I don't find that to be necessary. If you have it attached to an Enterprise BES, it would be nice if you went ahead and got rid of that for the new owner. There are step by step directions on the internet on how to do this.

Make sure to visit your contacts, then import / export. Export contacts to your micro sd. It will be a vcf file. Then save / transfer that files elsewhere.

If you plan to get another blackberry. You can backup and restore your contacts by using the backup/restore data function in BB Desktop Software.

Who would think that wiping a device would save your contacts??!!
It is obviously, but believe or not I have made that mistake in the past. After I wiping the device I realize that I should have saved the contacts. Luckily I had a fairly recent backup.
It is important and handy to do ocassional backups of your device in case you lose it, or data loss for whatever reason.
Before handing over the phone to someone, erase all the contents of the phone. You can ask for the buyer's preference if he happens to be a friend of yours. Otherwise you can turn all your personal settings to factory settings. While deleting the applications of the phone, you could probably delete the third party the apps and leave alone the in-built apps.

No need to do this. Simply wipe the phone as mentioned above, and it will reset it to factory specs. An absolute beauty of the OS.
