Plantronics Voyager Pro HD + iPhone 4S - some issues
When I press and hold the button on the Voyager Pro HD, it does activate SIRI but then frequently it does not.
Also, when I press the button twice, it does sometime place the last outgoing call made, but sometimes it fails to do this.
And finally, although I have the 4S set to:
General > Accessibility > Incoming Calls > Headset
as far as OUTGOING calls, it seems like I have to click audio sources to select the <PLT VoyagerPRO> headset or else it defaults to the phone speaker.
I was JUST about to create my own post withe nearly identical issues until I came across your post. I had to replace my older Plantronics Pro HD with a new one; I ran over the old one with my car, lol. On the old headset, I was able to launch SIRI on my 4s simply by depressing the talk button for a few seconds. The new Voyager Pro HD is not launching Siri. Is there a setting that I need to toggle or enable in order to utilize this feature?

I don't know of any fix for this...and lately, my Plantronics Pro HD (new model, purchased just a few weeks ago) never launches Siri and never dials the last call after clicking twice. The other issue with the PP HD is that whenever I place an outgoing call on the handset, I have to push the Audio Sources to select PLT_VoyagerPro just before the phone starts dialing, otherwise it reverts right away to the iPhone for the call.
So, to summarize, the PPP Pro HD has three issues with the iPhone 4S:
1. Won't activate Siri.
2. Won't re-dial last outgoing call, even after pushing the main button twice.
3. Won't lock onto the headset for outgoing calls unless the Audio Source is prompted at least twice for Headset, once when the call is made and once again just before the phone starts ringing.
I still have my old Plantronics Pro somewhere (purchased about 3 years ago) if I can find it I may test it and see if it works better, at least for some of the features. The Pro HD is the new model. The Pro (without the HD) is the old one.

if you still have your old PP how about testing?

I went and got a new Plantronics Voyager Pro HD, and this one works fine so far. Activates SIRI with one long click, redials the last number after a double click, and engages properly on outgoing calls.
It's extraordinary because the place I got the new Pro HD is the same place I got the first one - they were right next to each other on the shelf. And then you had a defective one too from some other establishment in some other state. So this means...that there are a LOT of defective Plantronics Voyager Pro HDs out there!

The new Voyager Pro HD I got (the replacement one), that was working fine with my iPhone 4S for about six weeks, just started having the same problems as the first one:
1. Won't activate Siri.
2. Won't re-dial last outgoing call, even after pushing the main button twice.
3. Won't lock onto the headset for outgoing calls unless the Audio Source is prompted at least twice for Headset, once when the call is made and once again just before the phone starts ringing.
so this is obviously a chronic problem with this model handset. Disappointed.
I think I found the solution! I had the exact same problem as MANBETALKING with my Voyager HD and iPhone 4S (iOS 6). Everything worked fine initially. Then it would only work if I reset the pairing. Then it wouldn't work except in exactly the manner MANBETALKING described in his 9-3-12 post.
After I unpaired my headset, did the double press reset on my iPhone 4S (holding down the power and home buttons), then paired the headset, Siri and everything else works just fine again. I hope this helps someone out there.
