As promised, here are my results:
Following the very thorough tutorial at:

As a rank NooB, I'll be the first to say I don't know much about modding. But, what I've gathered are these key points:
BACKUP EVERYTHING FIRST! They really, really mean it- even the stuff you don't want!
The audio databases in the audio directory contain a listing of ALL sounds on the phone, and are NOT CHANGED when you delete something using PK tools. So although the startup and shutdown sounds are not visible in ANY of the ringtone detail menus, it means nothing- they are attached somehow, just not visible. It's a good bet the same is true of all the other sounds as well. SO BE CAUTIOUS AND FOLLOW THE DIRECTIONS IN THE TUTORIAL EXACTLY.
And a word of caution to other NooBs out there-
Really, just read the forums. I know we're not all gifted with search engines, but be patient and keep looking. Somewhere on the boards, someone has given correct step-by-step instructions on how to do whatever you are looking to do.
If you're in so much of a hurry that you can't take the time to find what you are looking for, you're GOING to end up with a nice looking paperweight. This isn't like a computer, where you can just re-OS over your mistakes- you could end up with something that doesn't power up. Once in that fix, the local cell store salesmen are only going to sell you a replacement and thank their good luck that another sucker is giving them a bigger commission by their own haste.
As for backing up, I found as a rank NooB, that Motokit is much more intuitive for backing up ALL files than PKman. HOWEVER, Motokit also seems much more dangerous for all its power. Definitely need to do more reading before messing with that bad boy!
