“The Internet wasn’t meant to be metered in bits and bytes, so it’s insane that wireless companies are still making you buy it this way. The rate plan is dead — it’s a fossil from a time when wireless was metered by every call or text.” John Legere 1/5/2017

How do you access that menu with all the call info?

So I found the logs under Analytics Data. However all my logs that begin with “awdd” are dated from 2018.
Is there a way to generate a new log?
Would be interesting to see if it’s reflecting the new codec before upgrading to iOS 13.4

Did you disable analytics sharing with Apple?

    It was disabled, yes.
    I turned it back on.
Since then have made several calls and had an incoming.
No new logs. Do they update on a certain timeframe?

Looks like I just had to wait for all the cached logs to be shared. They’re all gone and replaced with a few current ones.
And my codec does still say “AMRWB” on 13.3.1.

As of yesterday morning my wife, my dad, and I all separately noticed that calls on our iPhone to iPhone (XS/11 Pro's) all sounded drastically better on VoLTE than just days prior. It literally sounds like the person is talking directly into my ear. Not sure if EVS was activated in our area or what. It hasn't sounded this clear before. All phones are on the latest version of iOS. My 11 Pro is on 13.4.5 Beta 2. All phones have VoLTE enabled and it was in use during calls. I tried locating a call in the iPhone diagnostic logs, but for some reason it doesn't show the codec information.
Your results may vary. Network performance differs per user location.
