There are sms forwarding apps but it requires your phone to be turned on.
I don't think there's anything at the carrier level though.

Is there a way on any of the MVNO services that it can send an email to notify me I have a message? I don't leave my phone on all the time, and it's annoying to find out that I had a message 3 days ago.

As ShredFred said, I don't think there's anything like this available at the carrier level.
If you'd want to use Google Voice or TextNow, either can be configured to email you when a text message is received.
You could port your current cell phone # to GV for $20 if you don't want to give people a new # for texting, or you could get a new / additional # from either GV or TextNow.

GV will also transcribe your messages so you don't have to waste time listening to someone ramble on.
The only cost is your privacy.
A while ago, I used to get transcribed GV messages from some kid’s school (wrong phone number) that she kept skipping classes. The transcriptions were hilariously bad. I’m sure it’s improved since then.
