Cell coverage on the island is very good - haven’t been there in about 5 years, but Apple Maps worked fine on even the reduced speed data back then. You’ll likely roam on Digicel Caymans.
While most of the tourist things are on the west side of the island, our place that we stay at is on the East End, and we go to the beach up north (Rum Point). Never any issues with coverage.
I'll be staying on the East End myself.... at the Wyndham Reef Resort.

Depends on the roaming agreement and data speeds provisioned. Cayman Islands was amazing last time I visited. Didn’t have wireless with me then as it was years ago. The island has very advanced communications networks and has improved their subsea fiber connectivity to the island and implemented improved fiber optics connectivity on the island.
The wireless should be fine and you could just shop pricing and coverage of local sims at the wireless provider shops to get the best speeds and coverage. Prices will be higher than domestic USA. Im sure speeds on Tmobile will be slowed down significantly due to roaming costs.
I'm actually here now and have been connected to LTE the whole time with my T-Mobile sim. Speeds are very good.

Speeds would be higher with native sims as well as better latency and the like.
I remember them building out the latest subsea cables and the network on the island itself when it was announced online. Lots more bandwidth available and the island is easy to cover due to size. I forget which carrier has the lower spectrum band which would improve indoor coverage. You can look that up on the internet via Wikipedia which will list the providers and spectrum bands.
You will be roaming on Digicel. Certain places the tower will be over loaded and will experience slow data.
It might have been more useful for the OP when they posted their inquiry in November of last year and were planning to travel in December. Might be helpful for someone planning a future trip there in the near future. Oh well, no harm done, just a little late to the party.
